Fast defrosting with Lutetia®: outstanding performance, versatile technologies
Defrosting meat products is usually a lengthy process in which frozen food loses its liquid content and active protein. Lutetia equipment uses technologies that counteract the drip loss of meat. In the rotating drum of the tumbler, frozen meat IQF or in blocks is defrosted by cold steam injection under vacuum, retaining valuable meat juices and reducing weight loss by 5–10% compared to conventional methods. This process also stops microbial growth, enhancing food safety.
For delicate products like fish, poultry, and premium cuts, Lutetia has developed a new technology: static defrosting in the chamber. The high level of airflow, saturated humidity, and patented technology based on convection inside the chamber makes it ideal for fragile products, such as fish or chicken filet.
Small footprint, excellent poultry protein recovery: from the brand AM2C
Innovative separation technology with the smallest footprint – this is achieved by the rotary line featuring the AM2C SME 820. It is an excellent entry-level machine to recover meat on bones and prevent valuable protein from entering the waste stream. The redesign of the frame has led to an even lower investment cost while still guaranteeing the quality of the separated meat. The machine is compact and lean and nevertheless handles a wide range of applications. It is ideal for MDM and MSM for beef and poultry and delivers the material for sausages and nuggets. It is designed for simplicity and ease of use without compromising on versatility.

Superior meat products with Weiler Dominator 14 Mixer Grinder
Provisur’s Weiler Dominator 14 Mixer Grinder delivers superior performance for processors of beef, poultry, alternative proteins, and pet food. Used in tandem with the Dominator Max™ inline reclaim system to boost output and product quality. Twin overlapping, counter-rotating paddles combine with an unload screw ensures fast, gentle, and uniform mixing. The technology in the grinding head provides clean cuts without increasing the temperature, and Dominator Balanced Flow Technology perfectly balances the flow of material, thereby maximizing throughput. Losses are minimized with inline fat analysis integrated after the first grinder, providing precise fat content data. It automatically adjusts fat or lean levels to meet target specifications, giving processors high level of control and enables them to reliably meet fat content and quality requirements.
High volume slide-plate forming for beef and chicken: Formax Ultra26
The Formax Ultra26 slide-plate former is ideal for producers servicing the growing global QSR market. The machine produces popular products such as burger patties, chicken filets and nuggets as well as non-meat products.
The Ultra26 features a servo driven knock-out system to accurately place formed products on conveyors for further processing. The touch screen control provides an easy and effective user interface while the servo mold plate drive enhances machine reliability and accuracy. The product feed conveyor allows fully integrated material handling.
